Smoky and Tender BBQ Grilled Chicken

Ingredients:
- 4 bone-in, skin-on chicken thighs 
- 4 bone-in, skin-on chicken drumsticks 
- 1 cup of your favorite BBQ sauce 
- 2 tablespoons olive oil 
- 2 tablespoons smoked paprika 
- 1 tablespoon garlic powder 
- 1 tablespoon onion powder 
- 1 tablespoon brown sugar 
- 1 teaspoon salt 
- 1/2 teaspoon black pepper 
- Wood chips for smoking (hickory, apple, or mesquite) 
Instructions:
- Soak the wood chips in water for at least 30 minutes before grilling. 
- In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, brown sugar, salt, and black pepper to make a dry rub. 
- Remove the chicken from the packaging and pat dry with paper towels. Season both sides of the chicken generously with the dry rub. 
- Preheat your grill to 225°F (107°C) using indirect heat. If using a gas grill, light the burners on one side of the grill only. If using a charcoal grill, pile the charcoal on one side of the grill. 
- Once the grill is heated up, place the chicken on the side of the grill without heat. Add a handful of wood chips on top of the coals or in the smoker box of your gas grill. 
- Close the lid of the grill and let the chicken smoke for 2-3 hours, or until the internal temperature of the chicken reaches 165°F (74°C) on a meat thermometer. 
- Once the chicken is cooked through, brush it with your favorite BBQ sauce and move it to the side of the grill with heat. 
- Grill the chicken for 5-7 minutes per side, or until the skin is crispy and caramelized. 
- Remove the chicken from the grill and let it rest for 5-10 minutes before serving. 
Tips:
- Use a meat thermometer to ensure the chicken is cooked to the correct temperature. 
- To keep the chicken moist, baste it with the BBQ sauce every 10-15 minutes during the smoking process. 
- Experiment with different wood chips for different flavor profiles.
