Smoky and Tender BBQ Grilled Chicken

4 bone-in, skin-on chicken thighs

1 tablespoon brown sugar
1 teaspoon salt

Instructions:
Soak the wood chips in water for at least 30 minutes before grilling.
In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, brown sugar, salt, and black pepper to make a dry rub.
Remove the chicken from the packaging and pat dry with paper towels. Season both sides of the chicken generously with the dry rub.
Preheat your grill to 225°F (107°C) using indirect heat. If using a gas grill, light the burners on one side of the grill only. If using a charcoal grill, pile the charcoal on one side of the grill.

Close the lid of the grill and let the chicken smoke for 2-3 hours, or until the internal temperature of the chicken reaches 165°F (74°C) on a meat thermometer.
Once the chicken is cooked through, brush it with your favorite BBQ sauce and move it to the side of the grill with heat.
Grill the chicken for 5-7 minutes per side, or until the skin is crispy and caramelized.
Remove the chicken from the grill and let it rest for 5-10 minutes before serving.
