Smoky and Tender BBQ Grilled Chicken

Instructions:

  1. Soak the wood chips in water for at least 30 minutes before grilling.

  2. In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, brown sugar, salt, and black pepper to make a dry rub.

  3. Remove the chicken from the packaging and pat dry with paper towels. Season both sides of the chicken generously with the dry rub.

  4. Preheat your grill to 225°F (107°C) using indirect heat. If using a gas grill, light the burners on one side of the grill only. If using a charcoal grill, pile the charcoal on one side of the grill.

  5. Once the grill is heated up, place the chicken on the side of the grill without heat. Add a handful of wood chips on top of the coals or in the smoker box of your gas grill.

  6. Close the lid of the grill and let the chicken smoke for 2-3 hours, or until the internal temperature of the chicken reaches 165°F (74°C) on a meat thermometer.

  7. Once the chicken is cooked through, brush it with your favorite BBQ sauce and move it to the side of the grill with heat.

  8. Grill the chicken for 5-7 minutes per side, or until the skin is crispy and caramelized.

  9. Remove the chicken from the grill and let it rest for 5-10 minutes before serving.
